Imbibition and Dormancy Break: The dry seed absorbs water rapidly (imbibition), swelling and rupturing the seed coat. Enzymes within the seed are activated, breaking down stored starches into usable sugars. 2. Radicle Emergence (Days 1-3): The embryonic root pushes out and begins seeking moisture and anchoring points in the medium. During this phase, trays are usually kept in the dark with heavy weight applied to the top. This "blackout phase" forces the stems to stretch upward in search of light, creating the desirable long stem of a microgreen, while the weight forces the roots to dig deep for stability. 3. Hypocotyl Elongation (Days 4-5): The stem grows rapidly, pushing the seed hull upward. 4. Cotyledon Expansion and Greening (Days 6-10): The trays are exposed to intense light. The cotyledons unfurl, shed their seed hulls, and rapidly produce chlorophyll, turning from pale yellow to vibrant green, red, or purple. Photosynthesis begins, synthesizing complex flavor compounds and phytochemicals. 5. The Harvest Window: The plant reaches peak nutritional density and flavor intensity. If left too long, the stems become woody and fibrous as the plant allocates resources to growing true leaves.
